Trish - My favorite "green food" is roasted asparagus with garlic and lemon. It is super easy and fast, and it can be cheap when asparagus is on sale. I think it could work with broccoli too. Remind me, and I will post something for asian style green beans this weekend.

Preheat your oven to hot (425 or even broil, depending on what else you are cooking). Take one bunch of fresh asparagus spears, wash, and cut off the tough "thick" ends. Leave the spears long. You could use frozen spears if you microwave them just long enough to almost thaw them. Spread the spears in a single layer on a cookie sheet. Drizzle them with olive oil, coarsely chopped garlic (use whole cloves if you are lazy), salt and pepper to taste. I squeeze half a lemon and sprinkle some lemon zest on them before roasting too. Roast them on the top shelf of the oven until they start to get barely brown, then turn the spears with tongs. Roast a few more minutes until they are done. They are done when they are all bright green, have a few brown spots, and aren't burnt. Squeeze the other half of the lemon on the spears, grate some more zest over them, and eat.

Hey Teresa - I definitely need recipes for the "green side" of my plate. I like vegetables, but find myself getting bored with them pretty quick - especially since I can't drown them in cheese sauce anymore! :)

Kerisue - that is great that you are so active! How do you get motivated? I find that I am developing into a couch potato...

Kerisue - we share a few vices... I will give up salted chocolate if you do. I think I could survive without it. I did have a good run on Tuesday and a nice ride today. Hopefully that cancels out the goldfish I just ate. My daughter needs to get out of her "fish" stage for my health.
Trish - let me know what kind of veggie recipes you are looking for. I like brightly colored veggies with sweet (think fresh red peppers, corn, tomatoes) with spicy for flavor without salt. A little lemon or vinegar can also wake up a dish. It is still blazing hot here, so I haven't started on my winter soup kick yet. We are still eating grilled summer veggies on salad, sandwiches, etc. I am going to work on making half of my plate "green" at dinner. Right now, it is usually 75% pasta, which might explain the belly.

doing well at exercise- water aerobics, yoga, elliptical, power walking outside. not so well at eating- icecream, salted chocolate, bars, chips...

Well I have had some success this week. I hope that I can keep going. I tend to lose my steam with new diets after about a week!
Teresa - I would love any good veggie recipes that you have. I have to watch sodium intake too so I need to find some creative ways to add more flavor.

I thought I could get away with eating whatever I want since I have been running three days per week, riding one day, and hiking one day. I guess I was wrong... No chips and no ice cream sandwiches this week. I am pretty proud that I ran 10 miles on Saturday and felt pretty good. I will try to stay off the junk food this week. How are you all doing?
